In the centre of the Var, Provence region, benefiting from a limes- tone and dolomite massif. Some parcels are at a slight altitude (400m) on a clay-limestone soil, particularly rich for the vine.
Vinification
Harvested at night. Short skin maceration before the pneumatic pressing. The juice is settled at low temperature. Alcoholic fermentation is thermo-regulated and malolactic blocked. Vinification is carried out in stainless steel vats under temperature control, with all stages carried out in the absence of air.
Tasting
A nice floral bouquet mixed with notes of yellow fruit (peach, apricot) and citrus. A beautiful attack in the mouth which brings all its freshness to this light and dynamic rosé. We find the same fruit notes that were present on the nose. A fragrant and light wine perfect to share with simplicity.
